Ingredients (serves 2)

1/2 cup coconut cream

1 cup chilled soda water

2 tbsp yuzu juice (or substitute lemon + lime juice)

1 tbsp peppermint syrup (or muddle fresh mint + sugar)

Ice cubes

Toasted coconut flakes, for garnish
Method

Add ice to two glasses.

In a shaker, combine coconut cream, yuzu juice and peppermint syrup. Shake well.

Pour over ice and top with soda water.

Stir gently, garnish with coconut flakes or mint leaves and enjoy immediately.
